the quests are random...I found a quest in hope village for a tier 5 weaponsmith ;D

Quest only has to be for your profession :) It doesnt have to be for your level, they can ask you to do tier 5 items so its just bad luck :)

And I thought it was the barkeeper's weird sence of humour  ;)

Sorry for the spam. And isolde is correct as always- tasks of the "craft me so-and-so..." type are based only on the hero's profession, not on his/her current level of mastery at the craft.

i even got quests which are not my proffesion. for example adamantium daggers for armorsmith and such. :)
